Portabello Steaks on Greens with Fiesta Mole

Here’s another favorite entree featured at our monthly Raw Superfood Dinner … Delish!

~3 Cups Portabello Mushrooms (or other favorite mushroom) sliced into bite-size pieces

1/2 Cup Olive Oil (or Sesame Oil)

1/2 Cup Nama Shoyu

1 Tbsp Balsamic Vinegar (or lime juice)

1-3 Cloves Garlic crushed

1/2 tsp Sun Fire Salt

1/4 tsp Black Pepper

1/4 tsp Cumin Powder

1/2 tsp Cilantro (dried or fresh)

For the marinade, combine all ingredients and let sliced mushrooms soak in it for 30-60 minutes or more.  Marinating mushrooms can be kept at room temperature or slightly warmed in the dehydrator.

Fiesta Mole Salad Dressing

1/2 Cup Olive Oil (or Sesame Oil)

1 Tbsp Lime Juice

1 Tbsp Fiesta Mole powder

Mix all ingredients well and spoon over the top of salad greens.  The longer this dressing sits, the thicker it will get … so add more oil if you prefer it runnier.   Another simple dressing is simply to sprinkle the greens with oil and Fiesta Mole powder separately.  Enjoy!

oatmeal goji cacao nib cookies

My friend Lisa passed on this recipe for raw Oatmeal Raisin Cookies, and I played with it to make it even easier and more upgraded with superfoods.

Here’s my version of the recipe … let me know what alterations you come up with that delight you :)

4 Cups Oat Flour*

1 Cup Palm Sugar (or other dried, crystallized sweetener like succanat or maple syrup powder)

1/2 tsp Sun Fire Salt

1 tsp Cinnamon

1/2 Cup Coconut Oil (softened, but not so warm that it’s an oil)

1/2 Cup Dates

2 Tbsp Vanilla Extract

3 Tbsp pure water

1 Cup Goji Berries (soaked and rinsed)

1/4 Cup Cacao Nibs (soaked and rinsed)

Optional: 1/4 Cup Walnuts (soaked, rinsed and chopped)

Green Gobblers

Melissa gobbling up a Green Gobbler

My good friend Courtney came up with this recipe she calls snickerdoodles and while I love, Love, LOVE these snacks, the name “snickerdoodle” just doesn’t work for me.  I mean, they’re green.  Snickerdoodle cookies aren’t green.

So, since the name keeps throwing me off I’ve decided to call them Green Gobblers … they are green and I can just gobble them all up (even though they are green).

Try out this recipe and I think you’ll see what I mean – the sweet taste packed full of protein and green goodness will have you coming back for more.

2/3 Cup Hemp Seeds

1/3 Cup Lucuma Powder

2 Tbsp Blue-Green Algae (or Vitamineral Green or another favorite green powder)

½ Tbsp Vanilla Extract

¼ tsp Sun Fire Salt

1 tsp Cinnamon

¼ tsp Nutmeg

1/3 Cup Coconut Oil (melted)

2 Tbsp Honey (or Vanilla Agave Nectar)
