Chocolate Fudge Brownie Super food Protein bars ~ Raw Vegan Style

So excited to share these protein bars I came up with using all the lovely super foods I had “lying” around! :) I needed a way to eat my super foods on the go when I am out and about and super busy and need something I can just whip out of my purse and will “stick to my ribs” and be healthy also. Having something like that handy really helps to avoid stops at less than ideal nutritionally dead food joints that seem to be everywhere you turn! I continuously find myself in a bind out all day when I get hungry and don’t want to lug around big jars of Chocolate Bliss in drink form. Not to mention I have a condition called PCOS (Poly Cystic Ovarian Syndrome) and I need to be more serious than ever before about my nutrition. It is important for me to have a good balance of Carbs/Protein handy at all times so I was really excited when I came up with these just playing around with what I had on hand.

I needed something that wouldn’t be to melty and would have a bar consistency and in thinking of this I decided to ground up some almonds to use as a base. I also considered Melissa once saying in one of her videos that Cacao butter holds form and stays solid better than coconut oil alone so I wanted that included to help it do just that. Having a base of a nut or nut butter and Cacao butter is recommended and then whatever else you might have on hand to play around with – Here is what I used:

1 c. ground organic truly raw almonds                                              

1/4 c. melted Cacao butter

1/4 c. cold pressed coconut oil

1/4 c. Vanilla Agave

1/2 c. ground Chia seed

1/2 c. *ground* Chocolate Bliss (you could use Cacao powder but I like the added super foods in Bliss so I grind it into a fine powder in my blentec blender or coffee grinder would work well)

3/4 c. Warrior Protein powder (Healthforce Nutritionals)

1/4 c. Fruits of the Earth powder (Healthforce Nutritionals)

1 tbsp. Vitamineral Green Powder (Healthforce Nutritionals)

2 tbsp. Lucuma powder

2 tbsp. Rainforest Rush

1/4 c. Carob Powder (Sunfire Super foods Brand)

Directions:

Melt the Cacao butter (I use a double broiler) and pour into a small mixing bowl. Add the coconut oil and stir in after it is melted and you have taken it off the stove. If it gets to hot put it in the fridge to cool off for a few minutes before adding to the powders. Mix the vanilla agave into the melted mixture and set aside. Place the cup of ground almond meal into a medium to large mixing bowl and stir dry powders in one at a time. After the dry ingredients are well blended together add your wet ingredients and work them all together. I prefer to get my hands involved because it really needs to get worked in good and knead like dough a little bit until all ingredients are well incorporated. You will have yourself a super food dough ball and it shouldn’t be to crumbly it should form a bit like clay dough! :) Press it into whatever you have on hand to help it become a bar shape (lining it first with parchment or wax paper would be ideal) I had a long flat plastic container big enough for about four cups of something and I pressed it into that making it as flat and smooth as possible and then I pre-cut the mix into the bar size I thought would be a good portion. My container made them come out a bit more like brownies than bars but you could call them brownies if you want because they are very similar – to me anyway :)

Once you have them pressed and pre-cut place them in the freezer for a half an hour. That is all it took for mine to become solid enough to cut them apart, wrap them in plastic wrap and place into a ziplock bag to store in my fridge. They are better off kept cold if possible. I plan to carry them around in small soft cooler bag with a cold pack when I am out. I may try one just in my purse alone to see how they hold up. That would be the most convenient option if they will keep good shape!

Blissful Almonds!

I LOVE Chocolate covered almonds and wanted to try my hand at making a raw chocolate version. It was really simple. They came out more like Clusters actually. Messy and delightfully delish!

Here is how I did it:

about a 1/2 cup melted Cacao butter

1 cup of ground Chocolate Bliss (I used my coffee grinder)

1/4 Cup of Vanilla Agave

1 1/2 cups raw almonds (you may soak them and dehydrate them if you wish but I didn’t I was to anxious to give it a try) :)

a sprinkling of sunfire salt

Something about Tiffany

Greetings fellow super duper super fooders! My name is Tiffany and I am here to share in my journey of healing through a core diet of super foods!

I am a stay at home wife and mother. I currently reside in Memphis, TN with my husband, 4 children and 5 pets! I will be posting when I can, my Journey of healing overweight and insulin resistance through eating a plant based, high raw diet, with Sunfire Superfoods being the center of my plan.

I’ve always had a weight problem and hormonal imbalances as well as mood disorders and I started out years ago trying to get to the root of the problem by changing my diet. I also, after years of unhealthy eating had a severe gallbladder problem. I was in excrutiating pain and after fighting it “tooth and nail” ended up getting my gallbladder removed. In the process I nearly lost my life to severe pancreatitis. I am glad I got my gallbladder out in the end though as it had over 800 stones in it and it was just to far gone. I wish I had known sooner about healthy eating. Alas, I ended up discovering raw foods, super foods and experimenting with many ways of eating. My problems came when not really sticking to any one path all the while battling my life long weight problem which I can attribute to compulsive eating, depression and just eating wrong.
