It is derived from the sweet nectar of the sugar blossoms that grow at the top of the tropical coconut palm tree.
This Coconut Palm Sugar is naturally low on the Glycemic Index (GI), which is often important to those who are concerned about weight control and diabetes. Coconut Palm Sugar is rated as a GI 35. In comparison, most honey is GI 55 and Cane Sugar is GI 68.
Coconut Palm Sugar has been known to deliver a slow release of energy, which sustains the human body through your daily activities without experiencing the "highs" and "lows" so often associated with cane sugar. Coconut sugar is made by evaporating the coconut sap, which is hand-harvested by traditional sugar farmers who climb high into the canopy of coconut palms to gently slice the blossoms from their stems and collect the sweet nectar. The collected nectar is then kettle-boiled into thick caramel syrup to produce palm nectar. To create coconut sugar, the nectar is then dried, and ground into crystals.
The Food and Agriculture Organization reports that coconut sugar and palm sweeteners are the single most sustainable type of sweetener in the world. Tropical coconut palms are an ecologically beneficial tree crop that require little water, restore damaged soils, and grow in diverse, wildlife-supportive agro-ecosystems.

Recipes Using Palm Sugar
You can use Palm Sugar anywhere you would use Vanilla Agave Nectar or other sweeteners. It's not quite as sweet as the Vanilla Agave Nectar, so you may need to use more Palm Sugar or 3 parts Palm Sugar to 1 part honey.
