Raw Holiday: Mock Whip Cream

If you’re going to have pumpkin pie, in my world, whip cream is a necessity!  Enjoy this whip cream anywhere else you would use regular whip cream, only without the dairy and just as quick and easy to make as old-fashioned whip cream.

½ Cup Macadamia Nuts

½ Cup Cashews (or substitute all macadamia nuts)

½ Cup Almond Milk

2 Tbsp Agave Nectar

1 Tbsp Vanilla Extract

1 tsp Psyllium Seed Powder

If you’re using cashews, soak them for ~4 hours (macadamia nuts do not require soaking).  Blend almond milk, agave, nuts, and vanilla in high powered blender until creamy.  Add psyllium powder and blend until mixed.  Pour into a container and chill for a couple of hours for best taste and thickness.

Enjoy!

Raw Holiday: Pumpkin Pie Without the Pumpkin

And it doesn’t even have any pumpkin in it, so it’s easy for your body to digest (raw pumpkin: not so easy).

Tastes best with the Raw Mock Whip Cream (of course!)

Crust:

½ Cup Dates

1 Cup Almonds (not soaked)

½ tsp Sun Fire Salt

Grind almonds and salt until a rough flour consistency (in food processor or high-powered blender).  Food process dates.  Mix all ingredients together in bowl (or in the food processor) until evenly sticking together.  Mold crust into a pie plate, starting with edges first.  Use wax paper as necessary to help mold the crust into place without sticking to your fingers.

Raw Holiday: Cauliflower Mashed Potatoes

Mashed PotatoesI didn’t make this recipe this year simply because it’s one of those raw food recipes that’s best enjoyed immediately or at least the next day.  It doesn’t store well in the fridge or freezer.  Nevertheless, it tastes good, especially with the Raw Mushroom Gravy on top!

½ Cup Cashews and/or Macadamias

1 Cup Cauliflower, chopped

¼ Cup Water

½ Garlic clove, minced

¼ Cup Lemon juice

½ Tbsp Sun Fire Salt

Soak cashews for ~4 hours (macadamias do not require soaking).  Blend nuts, cauliflower, garlic, lemon juice and water until a creamy consistency.  Add all ingredients into a large bowl and mix well, adjusting the garlic and salt to your desired taste.  Optionally garnish with chopped chives.  Makes about 2 Cups of mashed potatoes.  Best enjoyed immediately or refrigerate and reheat in dehydrator within 2 days.

Raw Holiday: Real Cranberry Sauce

I love cranberry sauce and now I will not eat any kind of cranberry sauce but this raw version.  It’s so much more alive and flavorful than the cooked options.  Many thanks to Yemiah’s DVD’s (sadly no longer published) for the simple and awesome recipe!

12oz package of fresh Cranberries (rinsed)

½ Cup Honey (or ¾ Cup Agave Nectar)

2 Oranges (organic)

Zest both oranges and reserve for later.  Juice both oranges and add juice, cranberries and sweetener to blender.  Blend on high until smooth.  Transfer to bowl and mix in orange zest.  Enjoy immediately or freeze/refrigerate for later.

Raw Holiday: Mushroom Gravy

mushroom gravyIf you’re gonna have mock turkey or cauliflower mashed potatoes, then you’ll definitely want some of this yummy gravy on top!

3 stalks celery

2 Tbsp Nut Butter (almond butter works well)

¼ Cup Water

1 Cup Portabella Mushrooms (quartered)

Holiday Raw: Mock Turkey

Mock Turkey Ready for Dehydration

Last year I tried two variations on raw mock turkey and a raw mock stuffing.  Now I’ve combined the best of the best into my current favorite raw mock turkey recipe.  With all the yummy Thanksgiving spices in here, I find I don’t desire any stuffing on the side.  Just plenty of mushroom gravy and fresh raw cranberry sauce.

You’ll need a dehydrator to make the turkey as a loaf or patties (my preferred method).  If you don’t have a dehydrator, you can try using your oven on low or saute the turkey “meat” on low with a little water added to the pan to make a “ground turkey meat” effect (works great for turkey tacos).
